Italian almond cookies

Not really Christmas cookies, but who cares.

150g vanilla JJ
125g powdered sugar
150g coarsly chopped almonds
2 eggs (I know, but Im sure any egg replacement will do)
1 tsp baking soda

  1. Mix
  2. Form three lines on a baking plate, but make sure they’re not too broad or they wont bake properly.
  3. Put in a cold oven and turn on at 180 degrees C for twenty minutes.
  4. Turn off oven, and chop the lines into pieces of 1cm and make sure there is space between them.
  5. Put the cookies back info the still warm oven and let them dry for around fifteen minutes.
